The next month was taken up with permitting. planning, learning, researching…and ordering stuff. Lots of stuff. Kitchen equipment, food supplies, to-go containers, a generator…the list goes on. But eventually (and I say that while really drawing out the word), we were up and running. The Alaska Waffle Company officially opened its doors (or rather, it’s service window) on July 24 in Sitka, Alaska.

Worth Noting: This is obviously the abridged version. If you’re considering building your own food truck, please know that this is a glossed over version of events. It’s the rear view mirror look back. You know, the version that gets remembered fondly but not necessarily with historical accuracy. That said, this web and graphic designer turned food trucker would not dissuade you from taking a leap and going after that dream of yours.
